• 1 lb. large shell pasta
  • 1 package Abbot's Butcher Ground "Beef"
  • 2 packages Kite Hill Ricotta
  • 1 jar marinara sauce
  • vegan mozzarella
  • fresh basil
  • sea salt and cracked black pepper
  • 3 T extra virgin olive oil


  • Cook your shell pasta according to package instructions in salted water until cooked through, drain & rinse with cold water.
  • In a skillet over medium heat, add your olive oil & ground beef. Season with salt & pepper, and cook until browned- about 5-7 minutes.
  • Allow your ground beef to cool slightly, then transfer to a bowl with your ricotta. Mix well & season if needed.
  • In a baking dish, cover the bottom in marinara sauce. Take your shells, and stuff them generously with the ground beef & ricotta mixture.
  • Spoon over extra marinara sauce onto each shell, and top with vegan mozzarella.
  • Broil until the cheese is melty and brown.
  • Garnish with fresh basil.
