Cook your shell pasta according to package instructions in salted water until cooked through, drain & rinse with cold water.
In a skillet over medium heat, add your olive oil & ground beef. Season with salt & pepper, and cook until browned- about 5-7 minutes.
Allow your ground beef to cool slightly, then transfer to a bowl with your ricotta. Mix well & season if needed.
In a baking dish, cover the bottom in marinara sauce. Take your shells, and stuff them generously with the ground beef & ricotta mixture.
Spoon over extra marinara sauce onto each shell, and top with vegan mozzarella.
Broil until the cheese is melty and brown.
Garnish with fresh basil.
