Servings: 4 people

  • 2 T toasted sesame oil
  • 1 package Abbot's Butcher Ground "Beef"
  • 1/2 cup sesame ginger teriyaki sauce
  • 1 yellow bell pepper
  • 1 hothouse cucumber
  • 1 bunch fresh cilantro
  • 1/2 cup fresh chopped green onion
  • 1 cup vegan kimchi
  • 1 serrano pepper
  • 2 T sesame seeds
  • 4 cups cooked white or brown rice

  • Add your toasted sesame oil to a skillet over medium heat. Once its heated, add in your "ground beef" and cook until it starts to brown. Then add your teriyaki sauce and allow to cook on low heat for a few minutes until everything is heated through.
  • While your beef is cooking, thinly slice your yellow bell pepper. Then, using a vegetable peeler, shave your cucumber into strips and roll them into little roses (optional), and chop up your cilantro, scallions, and serrano pepper.
  • Add 1 cup of cooked rice to the bottom of a bowl, and then top with your teriyaki "ground beef", a healthy scoop of kimchi, and all of your vegetables and herbs.
  • Garnish the bowl with sesame seeds.
