Crunchy Carrot & Radish Slaw Burger

Ingredients

1 package Abbot’s Whole Burger

1 large carrot, julienned

1 cup red radishes, sliced thin

1 small daikon radish, julienned

1 medium watermelon radish, thinly sliced and quartered

1/2 medium cucumber, julienned

2 tablespoons minced cilantro

1 tablespoon extra virgin olive oil

For the dressing:

2 tablespoons extra virgin olive oil

2 tablespoons lemon juice

2 teaspoons maple syrup

1 teaspoon dijon mustard

1/2 teaspoon salt

1/4 teaspoon pepper

Description

This slaw spotlights three varieties of radishes: red, daikon, and watermelon. While the radish may seem like a humble root vegetable, it’s actually a superfood, rich in disease-preventing vitamin C. Alongside vitamin A-rich carrots and our protein-packed Whole Burger, this is definitely a nutrient-dense (and delicious) dish that you’ll want to add to your recipe rotation.

Method

  1. Make the slaw. Whisk together the dressing ingredients. In a large bowl, toss the sliced vegetables and the dressing. Set aside to marinate while you cook the burgers.

  2. Cook burgers using the olive oil, according to the package directions.

  3. Serve the radish slaw with a burger on top. Enjoy!
