Ingredients

For the salad

1 package Abbot’s Whole Burger

2 slices Miyoko’s mozzarella

1 ½ cups watercress

1 ½ cups baby arugula

1 ½ cups baby spinach

1 ½ cups mixed greens

½ cup microgreens

1 cup quartered english cucumber

1 avocado, sliced

For the dressing

2 tablespoons extra virgin olive oil

1 tablespoon white wine vinegar

1 teaspoon Dijon mustard

1 teaspoon maple syrup

1 medium clove garlic, minced

¼ teaspoon kosher salt, to taste

Pinch black pepper

Description

So simple. So nourishing. When you want something fresh, green, and packed with plant protein, this is the recipe to recreate.

Method

  1. Cook the Whole Burger according to the package directions. After flipping the burger, add a slice of plant-based mozzarella to the top of each patty. Cover with a lid and cook 4-6 minutes, until the patty is golden and the cheese is melted.

  2. Meanwhile, in a small bowl, whisk together the dressing ingredients. Set aside.

  3. Toss the  greens and cucumber in a large bowl.

  4. Plate the dish. Place a bed of greens on a large plate, top with the sliced avocado, then a drizzle of dressing. Add the Abbot’s Whole Burger and serve immediately. Enjoy!
