Ingredients

1 package Abbot’s Whole Burger

Extra virgin olive oil, for cooking

2 burger buns

Vegan tzatziki (below)

½ cup pickled red onions

¼ cup roasted red peppers, sliced

¼ english cucumber, sliced and quartered

For the vegan tzatziki

1 cup unsweetened non-dairy yogurt

1/4 cup grated cucumber

2 tablespoons lemon juice

1 tablespoon chopped fresh dill

1 teaspoon chopped fresh mint

1 clove garlic, minced

1/2 teaspoon salt

Description

Method

  1. Cook the burger patties according to the package instructions.

  2. In a small bowl, whisk together the tzatziki ingredients.

  3. Assemble the burgers. Spread several tablespoons of tzatziki on the bottom of each bun. Add the cooked patty, then top with pickled red onions, red peppers, and cucumbers. Top with the bun. Enjoy!
