Ingredients
¼ cup extra virgin olive oil, divided
1 medium yellow onion, small diced
1 package Abbot’s Ground “Beef”
1 15-ounce can black beans, drained and rinsed
1 cup chopped spinach
1 teaspoon salt
1 teaspoon chili powder
½ teaspoon cumin
12 small corn tortillas
2 cups shredded iceberg lettuce
Guacamole and salsa, to serve
Description
Elevate your next taco night with this simple-yet-delicious recipe. Tucked into every tortilla is a protein-rich filling featuring our Ground “Beef”, black beans, and spinach. Pair with creamy guacamole and bright salsa for peak enjoyment.
Method
Preheat the oven to 425°F.
In a large pan over medium heat, sauté the onions in two tablespoons of the olive oil until translucent.
Add the “Beef” and cook until nicely browned.
Add the beans, spinach, salt, chili powder, and cumin. Stir well and use the spatula to mash the beans. Cook for 3 minutes to warm the beans and wilt the spinach.
Microwave 6 tortillas at a time between two damp paper towels for 30 seconds, until pliable.
Add the remaining two tablespoons of olive oil to a large baking sheet. Working one at a time, rub each tortilla in the oil on both sides, then spread 3-4 tablespoons of the “Beef: mixture on one half of the tortilla and then fold it in half.
Bake for 10 minutes, flip, then bake for another 10 minutes.
Open the tops of the tacos and top with iceberg lettuce.
Serve with guacamole and salsa
