Fresh Herb & “Beef” Orecchiette

Ingredients

  • 1 package of Abbot’s Butcher Savory Ground “Beef”

  • 2 cups Baby Bella mushrooms, sliced

  • 2 cloves garlic, minced

  • 8 ounces orecchiette pasta

  • Handful of spinach

  • Handful of parsley, set some aside for garnish

  • 4 tablespoons plant-based butter

  • 1 tablespoon avocado oil

  • Himalayan salt, to taste

  • Cracked black pepper, to taste

Description

Delicious “Beef” orecchiette pasta complimented by hints of sautéed garlic and umami flavors, garnished with fresh parsley. The perfect comfort meal for a night at home with a glass of wine or weekend supper with friends and family.

Method

  1. Cook the orecchiette pasta according to its package instructions. While the pasta is boiling, cook the “Beef” according to its package instructions.

  2. Then, sauté the mushrooms, garlic and butter on medium heat. Once the butter is melted and the mushrooms are soft, add the orecchiette pasta, Himalayan salt and black pepper to the pan. Continue to sauté the mixture until the pasta is mixed thoroughly with the seasonings.

  3. Add the “Beef” and spinach, sautéing the spinach until it is wilted. Once wilted, add in the parsley and sauté for another 1 - 2 minutes.

  4. Garnish with more fresh parsley and enjoy warm!
