“Chorizo” Breakfast Flautas

Ingredients

  • 1 package of Abbot’s Butcher Spanish Smoked “Chorizo”

  • 3/4 bottle of plant-based egg

  • 6 medium flour tortillas

  • 1/2 cup plant-based Colby Jack cheese

  • 1 tablespoon avocado oil

  • 2 - 3 tablespoons plant-based butter

  • 1/2 green bell pepper, sliced

  • 1/2 red onion, sliced

  • 1/3 avocado, sliced

  • Optional: salsa and/or hot sauce

Description

Our favorite plant-based breakfast protein, Spanish Smoked “Chorizo”, has leveled up with these crispy, delicious rolled tacos. Fiery plant-based “Chorizo” and “egg” rolled with green bell pepper, red onions, and topped with freshly sliced avocado. Enjoy these decadent handheld tacos with a side of salsa or your favorite hot sauce.

Method

  1. Cook the “Chorizo” according to its package instructions and set aside.

  2. Cook the scrambled eggs and set aside.

  3. Sauté the green bell pepper and onion until soft and set aside.

  4. On a cutting board, in the center of the tortilla, sprinkle a handful of cheese in the center. Then add about 2 spoonfuls of the scrambled eggs and 1 spoonful of peppers and onions. Roll the ingredients together tightly without tearing the tortilla. At the very end, add a handful of cheese to seal the tortilla while it’s cooking. Place the rolled taco on the folded side, so it remains closed on a separate plate. Repeat until all 6 tortillas are rolled.

  5. In a large pan on medium heat, add the butter. Once the butter is melted, turn the heat down low. Carefully place each rolled taco onto the pan with the folded side facing down, so that they remain closed. Let the rolled tacos sit in the pan for about 5 minutes. This should allow the cheese to melt and seal the tortillas.

  6. With a flat wooden spoon, carefully lift one rolled taco up to see if the side is cooked to a golden brown. If it is, flip over to cook the other side. Repeat with the remaining rolled tacos. Once they’re golden brown on all sides, place each rolled taco on a plate. Serve with sliced avocado. Add salsa or hot sauce on the side and enjoy!
