“Chorizo” & Pear Crostini

Ingredients
1 loaf of french bread (long loaf)
1 ripe, but firm bosc pear
1 package of Abbot’s Butcher Spanish Smoked “Chorizo”
1 block of firm tofu
1 tablespoons lemon juice
2 tablespoons nutritional yeast
1/2 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon garlic powder
Sea salt & pepper to taste
Fresh parsley for garnish
Description
If you want to impress your guests, these “Chorizo” & Pear Crostini’s will do the trick. Ready in under 30 minutes, french bread is topped with Abbot’s Butcher Spanish Smoked “Chorizo”, pears, and a delicious tofu “ricotta” spread.
Method
Cook “Chorizo” according to package instructions. Set aside.
Thinly slice pear.
In a bowl, mash tofu until fine (should resemble ricotta). Add seasonings and lemon juice and mix together well.
Cut bread into 1/2 inch slices and toast until slightly golden brown.
Assemble crostini by putting a piece of pear on top of the toast. Add a dollop of the tofu “ricotta” in the center of the pear, and a spoonful of “Chorizo”. Garnish with parsley. Serve immediately.
