Ingredients

1 package Abbot’s Ground “Beef”

2 tablespoons extra virgin olive oil, divided

1 tablespoon yellow mustard

4 cups shredded romaine

1 small-to-medium sweet onion, thinly sliced

⅓ cup pickles, roughly chopped

1 large tomato, diced

⅓ cup shredded vegan cheddar cheese 

2 tsp sesame seeds

Vegan Thousand Island dressing, for drizzling*


*Make it Whole30 and use your favorite Whole30 approved dressing or Dijon mustard

Description

A healthy twist on a classic dish, featuring Abbot's plant-rich Ground "Beef," tangy pickles, and non-dairy cheese alongside crisp romaine lettuce and juicy tomatoes. Topped with red onions and a tangy Thousand Island Dressing, this salad is the perfect combination of fresh flavors and hearty satisfaction.

Method

  1. Using 1 tablespoon of extra virgin olive oil, sauté sliced onions until caramelized (they should be brown and very soft). This may take up to 20 minutes. Stir occasionally to prevent sticking or burning. 

  2. Cook “Beef” according to package instructions. Turn off heat and mix in mustard. 

  3. Distribute lettuce between two large salad bowls. 

  4. Top each bowl with equal portions of “Beef”, caramelized onions, pickles, tomato, vegan cheese, and sesame seeds. 

  5. Finish with a drizzle of dressing and serve immediately.
