Cauliflower Crust Taco Pizza

Ingredients

For the Cauliflower Crust*

1 pound frozen cauliflower rice, thawed and squeezed dry

2 flax eggs: 2 tablespoons ground flaxseed + 4 tablespoons water

¼ cup King Arthur gluten-free all purpose flour

3 tablespoons nutritional yeast

1 tablespoon cornstarch or arrowroot starch

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon salt

For the Pizza

1 package Abbot’s Ground “Beef”

2 tablespoons taco seasoning

1/2 cup pizza sauce

1 1/2 cup shredded non-dairy cheese

1/3 cup diced cherry tomatoes

1/3 cup shredded romaine lettuce

*Or use your favorite store-bought pizza crust

Description

Love tacos? This pizza is for you. Make your own cauliflower crust, or cut down prep time by using your favorite store-bought version. This tasty, nutrient-dense twist on a classic dish is one to savor.

Method

  1. Make sure cauliflower is drained well. Squeeze dry with a towel to release as much moisture as possible.

  2. Make the flax eggs. Mix the 2 tablespoons of ground flaxseed with the 4 tablespoons of water and let sit for 5 minutes.

  3. Preheat the oven to 400°F. Line a 12” round pan with parchment paper.

  4. In a large bowl, mix the cauliflower rice with the flax eggs, flour, nutritional yeast, cornstarch, garlic powder, oregano, basil, and salt.

  5. Transfer to the parchment lined pan and form the mixture into a round crust that’s 10-11” wide.

  6. Bake for 30 minutes at 400ºF, until dry and golden. Use the parchment paper to flip the crust over, and bake again until the other side is dry, 5-10 more minutes.

  7. Meanwhile, prepare the Ground “Beef” according to the package directions, stirring in the taco seasoning in the last 2 minutes of cooking.

  8. When the crust is ready, spread the pizza sauce over the crust evenly. Top with about 1 ¼ cup of the vegan cheese.

  9. Return to the oven for 10-15 minutes, until the cheese is melted.

  10. Remove from the oven and top with the cooked “beef”, tomatoes, lettuce, and extra cheese.
