Twice-Baked Cheesy “Chorizo” Potatoes

Ingredients

  • 1 package of Abbot’s “Chorizo”

  • 6 medium russet potatoes

  • 2 tablespoon plant-based butter

  • One large yellow onion, chopped

  • 2 tablespoons avocado oil, divided

  • 1/2 cup plant-based cheddar shreds

  • 1 cup plant-based sour cream

  • 4 sprigs of green onions, divided

  • 1 teaspoon cayenne pepper

  • 1 teaspoon cracked black pepper

  • 1 teaspoon Himalayan salt

  • 1 teaspoon onion powder

Description

Creamy, cheesy mashed potatoes and a spicy “Chorizo” cradled in a crispy skin, then topped off with cool sour cream and chopped green onions.

Method

  1. Preheat the oven to 450° F and rub each potato with avocado oil. Place them on a baking sheet.

  2. Bake for 1 hour or until a fork can pierce the skin easily and the potato is cooked through. Be careful not to overcook because the skin will rip when you remove the insides. Set aside to cool for about 15 - 20 minutes.

  3. Cook the “Chorizo” according to the package directions.

  4. Heat remaining oil in a pan. Add chopped onions & sauté until translucent yet still crunchy. Stir occasionally. Transfer to a large mixing bowl.

  5. When potatoes are cool to handle, cut each in half lengthwise with a sharp knife.

  6. Carefully scrape out the insides and add to the large mixing bowl with the sauteed onions. Be careful not to rip the skins. (You don’t need to scrape all the way to the skin. Leave a thin layer of potato for shell support.) Place the potato shells back onto the baking sheet.

  7. Add the “Chorizo”, sour cream, butter, cheese, green onions, Himalayan salt, cayenne and pepper to the mixing bowl.

  8. Smash until the potato mixture is well combined and smooth. (Adjust seasoning to taste, but the “Chorizo” should make it delicious without having to add more).

  9. Spoon a heapful of potato mixture into potato shells, filling each past the edge of the shells. Top with cheese and bake for an additional 20 minutes at 350° F, or until heated through and the cheese is melted.

  10. Top with green onions and additional toppings of your choice. Serve warm and enjoy!
