Simple Sweet Potato & "Chorizo" Chili

Ingredients

2 tablespoons olive oil

1 package Abbot’s “Chorizo”

1 16-oz jar salsa

1 15-oz can pinto or black beans, drained (not rinsed)

2 cups chopped sweet potatoes or butternut squash

3 cups vegetable stock

Salt, to taste

Make it spicier: Add a dash of cumin, chili powder, chopped jalapenos, and/or minced garlic

Garnish with: Avocado slices, vegan sour cream or cheese, fresh cilantro, fresh chives, tortilla chips

Description

This smoky chili boasts such a depth of flavor that you’d never know it was whipped up with only five ingredients and in under 45 minutes.

Method

  1. Prepare “Chorizo” according to package instructions. Set aside

  2. In a large pot, heat 1-2 tablespoons of olive oil over medium heat. Add chopped sweet potatoes, season with a pinch of salt, and add optional spices. Cook for four minutes, stirring so the spices do not stick. 

  3. Add stock, salsa, and water to the pot, turn up the heat, and bring to a low boil. 

  4. Add beans and “Chorizo” and simmer chili for 30 minutes or until sweet potatoes are tender. 

  5. Serve with optional garnishes.
