Ground “Beef” Sheet Pan Nachos

Ingredients

1 package Abbot’s Butcher Ground "Beef"

1 package Siete Taco Seasoning

1 bag Siete Maíz Totopos Corn Tortilla Chips

1 15-oz can black beans, rinsed & drained

2 tsp olive oil

1 ear of corn, kernels removed

1 cup shredded vegan cheese

2-3 roma tomatoes, diced

1 jalapeño, thinly sliced

¼ cup fresh cilantro

¼ cup non-dairy sour cream or yogurt

Description

We all love comfort food with a healthful twist. Nurture your inner child with our playful, quick Sheet Pan Ground "Beef" Nachos, but with a focus on wholesome, nutritious ingredients.

Method

  1. Preheat oven to 400°F. Line a baking sheet with unbleached parchment paper.

  2. Prepare Ground “Beef” to package instructions. Halfway through cooking, add Siete taco seasoning and stir to combine.

  3. Add olive oil to a skillet over medium heat. Add corn kernels and cook for 3-4 minutes, or until corn starts to soften.

  4. Place tortilla chips in one layer on the baking sheet. Top with “beef” mixture, black beans, corn, and non-dairy cheese. Bake for 5-7 minutes, or until the cheese is melted.

  5. Top with tomato, onion, jalapeño, non-dairy sour cream, and cilantro.
