Macrobiotic "Beef" & Green Bean Stir-Fry

Ingredients

2 tablespoons extra virgin olive oil, divided

1 package Abbot’s Ground “Beef”

1 pound green beans, trimmed

4 cloves garlic, minced

2-inch piece ginger, grated

1 tablespoon coconut aminos

1 tablespoon dry sherry

¼ teaspoon red pepper flakes

Description

Seeking more balance in your life? Start with this nutritionally robust, macrobiotic meal. A few wholesome, simple ingredients are all you need to feel a bit more grounded and totally nurtured.

Method

  1. Cook “Beef” according to package directions using 1 tablespoon of extra virgin olive oil. Set aside.

  2. Blanch the green beans. Bring a large pot of water to a boil. Add the green beans and cook for 3-5 minutes. Immediately transfer to a bowl of ice cold water. Drain and pat dry.

  3. Heat the remaining oil in a large skillet.

  4. Add garlic and ginger and cook for 30 seconds.

  5. Add the green beans, coconut aminos, dry sherry, and red pepper flakes. Cook 4-6 minutes, until the beans are just starting to brown and any liquid has evaporated.

  6. Add the “Beef” and cook for 1 minute more.

  7. Serve with brown rice.
