Ingredients

For the dressing

3 tablespoons red wine vinegar

3 tablespoons extra virgin olive oil

1 tablespoon maple syrup

2 teaspoons Dijon mustard

2 cloves garlic, minced

¼ teaspoon salt

⅛ teaspoon pepper

For the salad

6 cups mixed greens

1 package Abbot’s Chick'n

1 cup radishes, halved and thinly sliced

2/3 cup candied pecans

1/2 cup vegan feta (optional)

1/2 cup dried cherries

Description

Simple can be so satisfying. With whole, plant-rich ingredients like leafy greens and protein-packed Chopped Chick’n, you can create an abundant bowl of nourishment in 20 minutes or less.

Method

  1. Cook the Chick’n according to the package instructions.

  2. In a small bowl, whisk together the dressing ingredients.

  3. Place all the salad ingredients in a large bowl and pour on the dressing. Toss gently to combine. Serve immediately.
