Simple Rosemary Chick'n Over Rainbow Chard

Ingredients

1 package Abbot’s Chick'n

1/3 cup vegetable broth

2 tablespoons extra virgin olive oil

2 tablespoons coconut aminos

2 tablespoons maple syrup

3 cloves garlic, minced

1 teaspoon fresh rosemary leaves, minced

1 1/2 cups fresh cranberries, divided

3-5 sprigs fresh rosemary

Steamed rainbow chard, to serve

Description

Fresh rosemary and tart cranberries infuse our protein-rich Chick’n with the flavors of the holidays. Make this wholesome 30-minute meal any time you’re in need of a festive pick-me-up.

Method

  1. Preheat the oven to 375°F.

  2. Heat the broth, oil, coconut aminos, maple syrup, garlic, and rosemary in a saucepan over medium high heat, until simmering.

  3. Add 1 cup of the cranberries, cover and cook at a strong simmer until the cranberries burst, about 5 minutes.

  4. Add the Chick’n, stir, and cook on high 2-3 minutes to brown.

  5. Transfer the mixture to a medium baking dish. Top with the remaining ½ cup of cranberries and the sprigs of rosemary.

  6. Bake for 10 minutes.

  7. Serve over freshly steamed rainbow chard.
