Ingredients

For the noodles

16 ounces soba noodles

Extra virgin olive oil

For the sauce

¼ cup chili oil with bits

1 scallion, finely chopped

2 tablespoons soy-free sauce (like coconut aminos)

2 cloves garlic, very finely minced

2 teaspoons maple syrup

1/2 teaspoon ground Sichuan pepper

For the “Beef”

2 tablespoons extra virgin olive oil

1 package Abbot’s Ground “Beef”

3 dried chilis

¼ teaspoon ground Sichuan pepper

1 teaspoon soy-free sauce (like coconut aminos)

To serve

Scallions

Chili crisp

Description

Consider this recipe your gateway into the wonderfully delicious world of chili crisp. It’s a natural pairing for these protein-packed dan dan noodles, but you can use it to spice up almost anything—from Chick’n pasta to roasted vegetables. Note: the heat builds, so add a little at a time if you’re sensitive to spice.

Method

  1. Cook the noodles according to the package instructions. Toss with a drizzle of olive oil to prevent sticking. Set aside.

  2. In a small bowl, whisk together the sauce ingredients.

  3. Heat the extra virgin olive oil in a skillet over medium heat. When the oil is hot add the chilis and fry until fragrant.

  4. Add the “Beef”, Sichuan, and soy sauce. Cook until the “Beef” is browned.

  5. Divide the sauce among three bowls. Add the cooked noodles to each bowl and toss with the sauce. Top with the “Beef” mixture. Garnish with scallions and a drizzle of chili crisp.
