Quick "Chorizo" & Sweet Potato Hash

Ingredients

1 package Abbot’s "Chorizo"

1 pound sweet potatoes (1 large potato), peeled and cut into 1/2” pieces

2 tablespoons extra virgin olive oil

1 teaspoon kosher salt

½ teaspoon pepper

1 bunch kale, de-stemmed and roughly chopped

Description

A healthy hash never fails to please. Whether you’re cooking for yourself or a whole family, this one-pan meal is something to add to your weekly rotation.

Method

  1. Heat the olive oil in a large cast iron skillet over medium heat. Add the potatoes, arranging in a single layer, and season with the kosher salt and black pepper.

  2. Cover with a tight-fitting lid and cook undisturbed until the potatoes are tender and the bottoms are golden brown, about 7-8 minutes.

  3. Uncover and stir. Add the “Chorizo” and cook uncovered, stirring occasionally, until the potatoes are golden brown and the “Chorizo” is cooked through, about 7 minutes.

  4. Stir in the kale, cover, and cook 2-3 more until the kale is just wilted.

  5. Transfer to serving bowls and enjoy!
