Shaved Brussels Sprouts Salad

Ingredients

1 tablespoon olive oil

1 package Abbot’s Butcher Chopped Chick’n

1 pouch Haven’s Kitchen Herby Chimichurri 

1 10-ounce bag shaved brussel sprouts

½ cup dried cranberries

½ cup toasted walnuts 

Salt and pepper to taste

Description

There’s more than one way to enjoy brussel sprouts. This endlessly versatile and nourishing vegetable pairs delightfully well with our Chopped Chick’n, herby chimichurri dressing, crunchy toasted walnuts, and a bright pop of cranberries. Enjoy as a side to a holiday feast or as a meal on its own.

Method

  1. In a large skillet, heat oil over medium heat. Add Chick’n to the skillet and sauté for about 3 minutes, or when it starts to brown.

  2. Add brussel sprouts, ¼ pouch of Herby Chimichurri, and a dash of salt 

  3. Continue cooking for 6-8 minutes, until brussel sprouts are tender.

  4. Remove Chick’n and sprouts mixture from the heat and toss in the cranberries & walnuts. Add salt and pepper to taste, and serve warm.
