Ingredients

1 package Abbot’s Butcher “Chorizo”

2 medium sweet potatoes

3 medium red onions

2 tablespoons olive oil

1 teaspoon kosher salt

¼ teaspoon black pepper

¼ teaspoon paprika

⅛ teaspoon cinnamon

1/3 cup pepitas

Fresh sage leaves & lemon zest, optional, for garnish

Description

This is not your average salad. Made with thick, tender bites of cinnamon-roasted sweet potatoes, bright charred onions, and smoky “Chorizo”, this dish is perfect served as a hearty side or enjoyed as a main along with steamed or sautéed greens.

Method

  1. Preheat the oven to 400°F.

  2. Slice sweet potatoes into thick spears and cut the red onions into 6ths or 8ths (depending on the size of the onion). Arrange in a single layer on a baking sheet.

  3. In a small bowl, whisk together the oil, salt, pepper, paprika, and cinnamon.

  4. Drizzle the oil mixture over the potatoes and onions.

  5. Roast for 25-30 minutes.

  6. Meanwhile, cook the Abbot’s Butcher Chorizo according to package directions.

  7. To serve, toss the sweet potatoes and onions with the chorizo and the pepitas. Garnish with a few leaves of sage and a sprinkle of lemon zest.
