Mediterranean Chick’n Salad

Ingredients
1 package of Abbot’s Butcher Slow Roasted Chick’n
1/4 cup Kalamata olives, halved
1 cup romaine lettuce
1 cup spinach
1 tomato, cut into wedges
1/2 small or medium red onion, chopped
Plant-based feta, to garnish
2 tablespoons avocado oil
Description
An ideal starter or a light meal, loaded with garden fresh flavors. Our plant-based Chick’n is mixed with ripe tomatoes, red onions, Kalamata olives and plant-based feta - and served on a bed of refreshing, crunchy greens. Drizzle with avocado oil or customize with homemade vinaigrette.
Method
Cook the Chick'n according to its package instructions and set aside.
In a large bowl, toss together the romaine, spinach, red onion, tomato, and Kalamata olives.
Top with the Chick’n and plant-based feta. Drizzle avocado oil and enjoy!
