Ingredients

  • 1 bag of Craize Seeded Toasted Corn Crackers

  • 1 package Abbot’s Butcher plant-based “Chorizo”

Refried Black Beans

  • 1 tablespoon extra virgin olive oil

  • 1 clove garlic, minced or pressed

  • 1, 14-oz can black beans

  • ¼ teaspoon chili powder

  • ¼ teaspoon ground cumin

  • ¼ teaspoon ground black pepper

  • Salt, to taste

Topping Options

  • Cilantro

  • Pickled onions

  • Lime

  • Jalapeno

  • Non-dairy crema

Description

Transform simple store-bought ingredients into the perfect party food in under 25 minutes. These no-fuss two-bite tostadas surpass chips and dip any day, but they’re so easy to make. Make the appetizer game interactive by setting up a quick tostada bar of toppings. This is a DIY everyone will love.

Method

  1. Drain and reserve the liquid from the can of black beans. Heat a small saucepan over medium-low heat and add the oil. When the oil is hot, add the garlic. Saute for about 2-3 minutes, careful not to burn the garlic.

  2. Add the drained black beans and a couple spoonfuls of the reserved bean liquid to the saucepan. Add the chili powder, cumin, black pepper, and pinch of salt. Cook, stirring and mashing the beans often, until the beans have thickened to refried bean consistency, about 3-5 minutes.

  3. Cook Abbot’s Butcher “Chorizo” according to package instructions.

  4. Lay out the Craize Crackers and top with a generous dollop of refried black beans followed by a generous scoop of Abbot’s Butcher Chorizo. 

  5. Garnish with cilantro, pickled onion, a squeeze of lime, and any other desired toppings. Serve immediately.
