Smoky “Chorizo” Collard Wrap

Ingredients

  • 1 package Abbot’s “Chorizo”

  • 1-2 large collard green leaves

  • 1/4 avocado, diced

  • 1-2 tablespoons vegan mayo or non-dairy cheese spread (like Misha’s Joi flavor)

  • 1/4 cup shredded purple cabbage

  • 2 tablespoons diced tomatoes or pico de gallo

  • 2 tablespoons shredded carrots

Description

Craving something light but still satisfying? This fresh and flavorful collard wrap, filled with crunchy cabbage and protein-packed Abbot’s “Chorizo”, will fill you up without weighing you down.

Method

  1. Cook the “Chorizo” according to package instructions. Set aside.

  2. Lay out the collard leaf and spread liberally with mayo or non-dairy cheese spread, leaving a 1/2 inch border around all sides.

  3. Layer on 1/3 of the “Chorizo,” avocado, tomatoes, carrots, and cabbage as you were making a burrito.

  4. Carefully roll the leaf into a wrap, using a second leaf if necessary to reinforce the wrap. Enjoy!
