Wholesome Papas con "Chorizo"

Ingredients

1 package Abbot’s "Chorizo"

1 tablespoon extra virgin olive oil

2 medium russet potatoes, finely chopped into bite-sized cubes

2 bell peppers (red or green) diced

1 avocado, sliced

Salt and pepper, to taste

Description

All you need is four ingredients to craft a warm, hearty, and protein-packed breakfast. Make a double batch and refrigerate leftovers for easy, energizing meals on your most demanding days.

Method

  1. Rinse and drain potatoes.

  2. In a skillet, heat EVOO over medium-high heat and add potatoes. Season with salt and pepper then cover with lid. Cook for 10 minutes or until just shy of fork tender.

  3. Add the “Chorizo” to the skillet and saute for 7 minutes.

  4. Add diced bell pepper and saute for 2 more minutes or until there is a slight char on the potatoes and “Chorizo”.

  5. Transfer to a bowl and top with avocado slices.
