Healthy Loaded Sweet Potato Fries with Smoky "Chorizo"

Ingredients

1 package Abbot’s Butcher Plant-Based “Chorizo”

1 1/2 tablespoons EVOO

2 large sweet potatoes

2 tablespoons taco seasoning, to taste

1 can black beans

Juice from 1 lime

⅓ cup diced onion

Fresh cilantro, for garnish

Salt and pepper to taste

Optional toppings: Non-dairy sour cream or cashew crema, salsa, pico de gallo, guacamole or chopped avocado

Description

A fully loaded plate of fries you can feel good about. Our plant-based “Chorizo” is piled onto seasoned, crispy sweet potato fries along with seasoned black beans, fragrant onions, and fresh cilantro. Enjoy!

Method

  1. Preheat oven to 425 F. 

  2. Peel and slice sweet potatoes into long 1/2-inch strips (fry shapes).

  3. Lightly coat fries with 1 tablespoon EVOO and toss with taco seasoning. 

  4. Place fries on a parchment-lined baking sheet and roast until crispy, turning halfway through, about 25-30 minutes. Remove from oven and place on serving tray.

  5. While fries are roasting, prepare “Chorizo” according to package instructions. Set aside.

  6. Heat ½ tablespoon EVOO in a pot and saute onions until soft. Season with salt and pepper, then turn down the heat to medium-low and add beans. Cook to warm, season with salt and pepper again, then stir in lime juice. Turn off heat.

  7. Spoon beans over fries, followed by “Chorizo”, cilantro, and optional toppings. Serve immediately.
