Ingredients
1 package Abbot’s Fajita Chick’n
1/2 yellow onion, sliced thin
2 bell peppers, sliced into thin strips
To Serve: tortillas, black beans, salsa, avocado, vegan sour cream, fresh cilantro, lime wedges
Description
With one pan and minimal ingredients, dinner could not be easier. Sheet pan meals are a great way to serve a crowd or an intimate dinner of two. The charred veggies and crispy Chick’n will have everyone coming back for more.
Method
Preheat the oven to 425°F.
Spread the onion and bell peppers onto a rimmed sheet pan lined with parchment paper. Cook for 12 minutes, tossing halfway through. Add the Chick’n to the pan and cook for an additional 18-20 minutes until the vegetables and Chick’n are browned and slightly charred.
Serve with warm tortillas, salsa, guacamole, avocado, vegan sour cream and fresh cilantro.
