Ingredients

1 package of Abbot’s Ground “Beef”

1 can of vegetarian refried beans

1 recipe guacamole (below) or 1 ½ cups prepared guacamole

1 1/2 cups shredded romaine lettuce

1 avocado, peeled, pitted and diced

1 cup grape tomatoes, halved

1/2 cup diced scallions

1/4 cup cilantro, chopped

3/4 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon paprika

Dash of sea salt

1/8 teaspoon garlic powder

1/8 teaspoon onion powder

Sliced black olives (optional, for garnish)

For the guacamole:

3 medium avocados

½ small white onion, small diced

1 roma tomato, small diced

½ jalapeno, small diced

Juice of 1 lime

Salt, to taste

Description

Savor layer after layer of flavor and nutrition with this classic party dip. Paired with crunchy crudité or your favorite gluten-free chip, this crowd-pleasing dish eats like a well-balanced meal. 

Method

  1. Cook the Ground “Beef” in a pan according to its package instructions. About 5 minutes in, season the “Beef” with chili powder, cumin, paprika, salt, garlic powder and onion powder. Continue to cook until the “Beef” is browned and crispy. Remove from the heat and set aside. 

  2. Prepare the guacamole. In a medium bowl, mash the avocados. Add the onion, tomato, jalapeno, and lime juice. Stir to combine, then add salt to taste.

  3. Spread the refried beans evenly into a medium casserole dish. Top with a layer of guacamole, then add shredded lettuce, followed by the "Beef", tomatoes, olives, scallions and cilantro. Drizzle with crema.

  4. Serve with tortilla chips and enjoy!
