Ingredients

1 package Abbot’s “Chorizo”

1 cup plant-based queso

12 6-in corn tortillas

2 tablespoons extra virgin olive oil, divided

Juice of 1 lime

6 toothpicks, cut in half

Sliced avocado (optional)

Tomato salsa (optional)

Fresh cilantro, for garnish

Description

Easy to make and so shareable, these crispy appetizers are perfect for any relaxed gathering. Pro tip: try baking in an air fryer for extra crispy texture.

Method

  1. Heat one tablespoon of the oil in a large skillet over medium heat. Cook the “Chorizo” according to package instructions. Turn off the heat and stir in the queso and lime juice.

  2. Preheat the oven to 450 degrees. Warm the tortillas for 30 seconds in the microwave. Keep them covered with a damp paper towel and work with one tortilla at a time. Brush tortillas with oil on both sides. Place a small amount of “Chorizo” mixture toward the edge of the tortilla and roll tightly. Place them seam side down on a baking sheet and secure with a toothpick half. Repeat with the remaining mixture.

  3. Bake for 15-20 minutes, until the taquitos are crisp and turning golden. Serve with sliced avocado and salsa.
