Classic Chick'n Caesar Salad

Ingredients

1 head of romaine

Avocado oil (for cooking)

1 package Abbot’s Chopped Chick’n

1 lemon

2 tablespoons cashew butter

1 teaspoon dijon mustard

1/2 tablespoon soy sauce

1/4 teaspoon sea salt

1/2 teaspoon garlic powder

1/2 tablespoon rice vinegar

Pinch of freshly cracked black pepper

Description

Crunchy. Refreshing. Packed with plant protein. We took this timeless dish and added our Chopped Chick’n to take the nutrition up a notch.

Method

1. Chop your romaine into bite-sized pieces. Set aside in a large bowl.

2. In a small dish, whisk together your caesar dressing ingredients: cashew butter, dijon mustard, soy sauce, sea salt, garlic powder, rice vinegar, black pepper, and the juice from the lemon. Set aside.

3. Prepare Chick'n according to package instructions. Add to the bowl of romaine.

4. Drizzle dressing over salad and toss to coat. Serve immediately.
