Ingredients

1 package Abbot’s Chopped Chick’n

1 box vegan pho broth (try Ocean’s Halo)

1 box rice noodles

1 bag bean sprouts

10-12 leaves fresh mint, cilantro, or Thai basil

Optional garnishes: lime slices, sliced jalapenos, enoki or shiitake mushrooms, sriracha, bok choy, ribboned carrots

Description

Yes, you can make delicious, belly-warming pho on a weeknight … with a few wholesome store-bought items. Use what’s left in your fridge to turn a humble bowl of broth into a satisfying and nutrient-dense meal.

Method

  1. Prepare Chick’n according to package instructions. Set aside.

  2. Prepare the noodles according to package instructions. Set aside. 

  3. Warm the broth in a pot over medium heat. Once hot but not boiling, transfer to serving bowls. Divvy out and gently place in the cooked noodles, topped with Chick’n, bean sprouts, and fresh herbs into each bowl. Serve with optional garnishes and enjoy immediately.
