Nourishing Mushroom, Chick'n & Barley Soup

Ingredients

1 tablespoon extra virgin olive oil

1 package Abbot’s Chopped Chick’n

1 medium yellow onion, diced

2 large carrots, thinly sliced

2 stalks celery, thinly sliced

3 cloves garlic, minced

2 teaspoons kosher salt

½ teaspoon black pepper

8 ounces cremini mushrooms, thinly sliced

1 cup barley

6 cups vegetable broth

For garnish: chopped fresh parsley, fresh thyme

Description

Golden, tender Chick’n, hearty barley, and meaty mushrooms make for a truly wholesome and satiating soup. This goes above and beyond traditional Chick’n noodle.

Method

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, garlic, salt and pepper. Saute for 3-5 minutes until the onions are soft.

  2. Add the mushrooms and cook for another 2-3 minutes.

  3. Add the barley and vegetable broth. Bring to a boil then simmer for 25-30 minutes.

  4. Meanwhile, cook the Chick’n according to the package directions.

  5. When the barley is soft, add the chick’n to the pot and cook 5 minutes to warm and let the flavors blend.

  6. Serve with a garnish of chopped parsley and thyme.
