Energizing Southwestern Gnocchi

Ingredients

1 package Abbot’s Fajita Chick’n

1 12-oz box Cappello’s Grain-Free Gnocchi

1 red bell pepper, sliced thinly

2 ears corn, kernels removed

2 cloves garlic, minced

3 tablespoons vegan butter, cut into cubes

½ teaspoons sea salt

½ teaspoons ground black pepper

3 tablespoons water

2 tablespoons fresh cilantro

Grated or shredded vegan cheese (optional)

Description

Gluten-free gnocchi adds an unexpected yet delicious bite to these fajita-style foil packs. Cooking on the grill imbibes a subtle smoky flavor, but you can just as easily make these in the oven. Our favorite part? The cleanup couldn’t be easier!

Method

  1. Preheat the grill to medium-high heat. Alternatively, preheat oven to 425°F. 

  2. Cut 3 sheets of foil into 10-12 inch-long rectangles. Evenly disperse gnocchi, bell pepper, corn, garlic, and cubed butter evenly in the center of each sheet of foil. Sprinkle with salt & pepper. Pour 1 tablespoon of water into each foil pack

  3. Cut 3 more sheets of foil, same size as before. Place on top of your bottom layer and crimp the edges together to seal.

  4. Place foil packets on the grill for 15-20 minutes, or bake in oven on a baking sheet for 15-20 minutes until the gnocchi is tender and the bell peppers are soft. 

  5. While foil packets are cooking, prepare Fajita Chick’n to package instructions. 

  6. Add Fajita Chick’n to foil packets, optional shredded vegan cheddar, and garnish with cilantro leaves. Enjoy hot!
